LDS General Conference is a time, every spring and fall, when members of the LDS faith stay home or tune in to view or listen to talks from church leaders in Salt Lake City. Many of us stock up on lots of yummy food and fun games for the weekend.
As you’re headed out to grocery shop, you might consider this recipe that our family often enjoys for breakfast on Saturday or Sunday. It goes together quickly and could easily be doubled or tripled for larger families.
Conference Quiche
3 c. loose-pack, shredded hash browns
1/3 c. butter, melted
1 c. fully cooked ham, diced
1 c. cheddar cheese, shredded
¼ c. green pepper, diced
2 eggs
½ c. milk
½ tsp. salt
½ tsp. pepper
Preheat oven to 425. Press hash browns between paper towel to reduce excess moisture. Press into the bottom and up the sides of an ungreased 8-inch pie plate. Drizzle with butter. Bake at 425 for 25 minutes. Combine the ham, cheese, and green pepper; spoon over crust. In a small bowl, beat eggs, milk, salt, and pepper. Pour over all. Reduce heat to 350. Bake 25-30 minutes or until knife inserted near center comes out clean. Allow to stand for 10 minutes before cutting. Serves 8.

Bingo tip: Yes, there’s a way to do this. No matter whose version you use, laminate the cards. Then as the children find the items in each square, they mark them with easy-peel stickers like those cheap star stickers. Here’s the link so you know what I’m talking about. (affiliate link) Or simply use dry-erase markers to mark the square. Otherwise, you will have “weeping and wailing” as the scriptures say and maybe even “gnashing of teeth” if your children use candy pieces as place holders and they slide all over the place. We’ve had many conference tears shed at our house from such sad experiences. Use the candy, instead, for prizes, and make up prizes so that everyone keeps playing and gets a treat after the grand-prize winner. To your toddler, you might say: “Yay! You have a sticker on the temple. Here’s your treat!”
